A fabulous prime rib recipe from Bob Zimorino.
Blend together:
½ cup olive oil
2 tbsp minced garlic
2 tbsp minced onion
Slather the above blend on the prime rib then add a light layer of kosher salt and coarse ground black pepper.
Place the roast in a pre-heated 450° degree oven for about 20 minutes to sear the outside and seal in the juices. Turn the oven down to 300 degrees and let it roast for 23 – 25 minutes per pound until it reaches 135° in the center.
This is for a rare roast. For mid rare roast to 140, medium 145. Remove the roast and allow it to sit for 10 minutes to allow conduction cooking to finish the roast. Slice and serve. A reheating tip would be to heat slices of prime rib in Au Jus for those who prefer mid well to well done.
