Happy Cinco de Mayo! Despite not having a drop of Mexican heritage in my blood, I still love celebrating this occasion– mostly because I have a deep seeded passion for Mexican food! Plus, it’s a good excuse to have a celebration and to drink margaritas…who needs an excuse for that?!
The other thing I love about Cinco de Mayo is that you needn’t spend a lot of money in order to have a good celebration with a lot of food. Mexican food is frugal…think rice and beans. And you can feed a lot of people and not spend a lot of money.
This year our family is excited because Cinco de Mayo happens to fall on our weekly “Taco Tuesday”, so we for sure will be celebrating! With a pot of beans, a bowl of rice, tortillas, some carne asada, salsa, shredded cabbage, shredded cheese and some of our homemade pickled jalapenos, my family will be coming back for more but my wallet won’t hurt a bit!

- Mexican Grilled Corn from The Cookie Rookie. This sounds so good! A nice zippy grilled corn beside a taco sounds fabulous and so summery.
- Walking Tacos from Frugal Coupon Living. I love Walking Tacos. They are fun, tasty and easy! They make the perfect camping food. And everyone loves making their own.
- Copy Cat Chilis Queso Dip from Passion for Savings. A cheesy Queso dip is the perfect accompaniment to a bowl of tortilla chips. This recipe definitely says Ole’!
- Homemade Refried Beans from Make It Missoula. I shared this recipe a few weeks ago. So easy and I love having portion in the freezer to just pull out when the boys need a refried bean fix!
- Easy Chili Relleno Empanadas from Frugal Foodie Mama.Who doesn’t love a good empanada? And combined with another favorite, the chili relleno, you will be coming back for more with this recipe!
And it wouldn’t be a complete Cinco de Mayo with a Margarita or two. I love the ease and refreshing taste of these Beer Margaritas from Tamilee Tips. I also love this recipe because Corona beer is on sale at the stores this month in celebration of Cinco de Mayo. So stock up and save now so you can enjoy these all summer long!
