What is marinara? We typically refer to it as a quick tomato sauce. Literally it is to souse or marinate. Here is an easy one:
Saute in olive oil an onion & bell pepper (cut into 1 inch pieces)
As onion and bell pepper start to brown, add minced garlic until it also starts to lightly brown.
Add 1/2 cup of red wine or water.
Add a 28 oz of canned tomatoes.
Season with oregano, salt, pepper and parmesan cheese.
Serve over pasta of your choice.
This is a basic marinara. You can add other veggies to this recipe, or sauteed meats. Want it thicker? Add a little tomato paste.
You can also change the nature of the sauce by the seasonings. Think about adding cumin and a touch of cinnamon and using it as a hot salsa over a burrito.
